Farm to Table Comes to Life Just in Time for Late Summer Harvest
(CHICAGO; August TK, 2010) — Throughout 2010, Executive Chef Frank Brunacci has taken diners on a culinary journey inspired by his favorite delicacies of each season with “Feasting at Sixteen with Frank Brunacci.” Presented at Sixteen, the modern American restaurant at Trump International Hotel & Tower® Chicago, the third installment of “Feasting at Sixteen” launches late summer from Monday, August 30 through Sunday, September 6 with an epicurean focus that hits close to home: Prairie Produce.
Throughout this special week, Chef Brunacci will showcase products sourced solely from local farms, all transformed into gourmet creations. While the award-winning Sixteen has always included products from farmers throughout the Midwest on its menu – along with additional, intricately sourced delicacies worldwide – Prairie Produce week will mark the first time that Chef Brunacci’s menu creations will be designed only with ingredients harvested within driving distance to Chicago. Guests who dine at Sixteen at any meal period throughout the week will be truly immersed in the farm-to-table movement, including detailed menus citing the origins and history of each ingredient; knowledgeable staff who can describe the growing, production and cooking process for each dish; and an expansive farmer’s market that defines the local food movement by directly linking guests with farmers and their specialties.
“Prairie Produce week is a celebration of the fantastic bounty available right here in the Midwest, and presents an exciting opportunity for us to make a new connection for our guests,” said Chef Brunacci. “By placing the spotlight on these products and inviting the farmers into Sixteen, we encourage our guests to explore the region while gaining first-hand knowledge of the importance and benefits that come from using locally sourced products.”

On Thursday, September 2, The Terrace at Trump on the 16th floor of the downtown Chicago luxury hotel will transform into a colorful Farmer’s Market, open to all Chicago residents and visitors from 7 to 11 a.m. Chef Brunacci has invited his favorite local purveyors and farmers to present their freshly harvested crops for public consumption, which will include cheese and butter from Nordic Creamery; handmade truffles from Katherine Anne Confections; a variety of produce from Nichols Farm; seasonal preserves from Rare Bird Preserves; beef and pork products from Slagel Farm; sausages from Mint Creek Farm; maple syrup from Burton’s Maplewood Farm; mushrooms, salsas and giardiniera from River Valley Kitchens; stone fruit and smoothies from Seedling Fruit; and pastries and pies from Uppercrust. Each attendee will receive a recyclable Trump International Hotel & Tower Chicago canvas tote shopping bag.
During the farmers market, Chef Brunacci will bring new meaning to farm-to-table meals by presenting a breakfast buffet that will feature produce taken directly from the participating farmers’ stands. Guests will be inspired by the breakfast creations and have the unique opportunity to step outside to the farmer’s market where they can purchase the exact produce used by Chef Brunacci. The buffet will be available inside Sixteen’s dining room from 7 to 11 a.m. for $35 per person.

On Sunday, September 5, Sixteen will present Harvest Brunch, a sustainable spin on the restaurant’s popular midday meal. From 11 a.m. to 2:30 p.m., diners can feast on unique alternatives and classic favorites, all showcasing ingredients from local farms, including:

Seasonal Vegetable Side Dishes featuring produce from Nichol’s Farms
Executive Pastry Chef Sarah Kosikowski will present an expansive Harvest Brunch Dessert Station filled with sweet and savory seasonal fruit pastries, including Red Raspberry Cremeux with Matcha Sponge Cake and Green Tea “Milk Jam”; Chamomile Poached Apricot Tarts with Honey Saffron Sabayon; and Roasted Red Plum Tatin with Five-Spice Crème Fraiche.
Sixteen’s Harvest Brunch is priced at $65 per adult, exclusive of tax, alcohol and gratuity, and $25 for children age 10 and under; there is no charge for children under the age of 4.

From August 30 through September 6, the award-winning Sixteen will feature only locally-produced ingredients throughout the à la carte dinner menu and Chef Brunacci’s special tasting menu, which change nightly. Experienced waitstaff will be on-hand to guide diners through the selections with detailed overviews of the origins of each dish. Executive Pastry Chef Sarah Kosikowski will complement the selections with a variety of desserts that feature fruits from local, sustainable farms, and Director of Wine and Spirits Rachael Lowe will provide wine pairings from bio-dynamic and organic vineyards, including a Zind-Humbrecht Pinot Gris from Alsace, France, and a Querciabella, Mongrana from Maremma, Italy.
The downtown Chicago hotel will continue to offer its unique, week-long “Feasting at Sixteen” dining series, wherein Chef Brunacci spotlights special ingredients through tasting events, special menu items, and more, and will present its final installment of 2010 in November, with a special focus on Pork.
